Drought stress is one of the most serious problems for agricultural systems of Iran. Because of water shortage at the end of growth season in many parts of Iran farmers are interesting to find and use drought resistant cultivars of wheat for this condition. In order to evaluating the effect of drought stress on grain yield, grain protein content and some physiological criteria of wheat (\textit{Triticum aestivum}) an experiment was conducted during 2003 growing season in Agricultural Research Station of Torogh , based on randomised complete block design (RCBD) with four replications. The main plots (horizontal factor) were assigned to 3 levels of irrigation, i.e. complete irrigation (IR1), cutting of last irrigation (IR$^{2}$), and cutting off two last irrigations (IR$^{3}$). The sub"=plots (vertical factor) were assigned to 5 cultivars of wheat (C-73--5, C-75--5 AND C-73--20 cultivare wiche developed in Iran and two French cultivars i.e. Gaspard and Gascogene). Based on the results, effect of irrigation levels on grain yield, 1000 seed weight, test weight, percent of protein in seeds, canopy temperature and relative water content (RWC), significant ($p < 0.05$), and with increasing drought stress all of these parameter increased  but canopy temperature and percent of protein were decreased. Also results showed that Stress Tolerance Index (STI) was the best index for selection of drought resistance cultivars with stable yield under stress and non"=stress conditions, and C-73--5 \& C-73--20 cultivars in comparison with other cultivars showed more resistance in drought condition. Based on results Gaspard cultivar which developed for well watered condition has the highest sensitivity to drought stress during grain filling at the end of growth season.}
