Background: The cooling effect on growth rate of bacterial viable count, this process increase growth of some bacteria like \textit{Listeria monocytogenes} especial in the log phase. Healthily that means food can be deterioration and associated with food borne diseases.  







Objectives: The aim of this study is to investigate the growth and survival of \textit{Listeria monocytogenes }in the Sudanese traditional food (Tagalia).







Specific objectives:   



1- To identify the growth of \textit{Listeria monocytogenes} in tagalia







2- To compare the growth of \textit{Listeria monocytogenes} between tagalia and medium (brain heart infusion).







3- To determine intrinsic parameters (pH and moisture content) that influence the growth of \textit{Listeria monocytogenes} in tagalia.







4- To identify the morphological cells change of \textit{Listeria monocytogenes }during chilling condition.







Methods: 



This is a first analytical microbiological study conducted in the survival of \textit{Listeria monocytogenes} in a traditional Sudanese food like Tagalia, also the significant running this research in \textit{Listeria monocytogenes} has been involved in numerous food borne illness associated with outbreak occurred with traditional Sudanese food.







Growth curves of \textit{Listeria monocytogenes} were carried in Brain Heart Infusion (BHI) and tagalia during which the inoculated growth media, whether BHI or tagalia, were incubated under different temperatures.



The growth and survival of \textit{Listeria monocytogenes}, were studies incubation temperatures of   37\textdegree{}C, 25\textdegree{}C and at 4\textdegree{}C.







In addition to the patterns of \textit{Listeria monocytogenes} growth, the morphological changes of \textit{Listeria monocytogenes }cells during chilling were recognised under the oil immersioned lens. 







Factors affecting growth of \textit{Listeria monocytogenes }in Tagalia including pH, moisture content and ingredients were recorded all through growth curves experiments.







Results: According to this study; tagalia contents have a positive role on \textit{Listeria monocytogenes} growth.



The comparison between the growth of \textit{Listeria monocytogenes} in BHI and its growth in tagalia reveal similar growth patterns.
