Sudan is a developing African country with thirty-nine millions population and diversified sources of food. This paper overview the various factors associated with food production that may cause risks to human health after consumption, it described the actual situation of the production of food in Sudan either in the traditional sector or modern sector considering that even today there are no classification for the biosafty levels in food production -units was done.  



The paper addressed major trends that affect improvement of the food quality  and implication of these challenges for consumer risk exposure to food safety hazards, it classified this challenges as groups, group one contain presence of hazardous factors such as microbial agents, antibiotics and pesticides residues, preservatives, heavy metals, hormones, intoxication and food additives. The second group illustrated lack of facilities and precautions necessary during production such as absence of   good hygiene practice during production, good microbial practice to eliminate/reduce microbial load or contamination, presence of cooling, storage conditions, packaging and marketing procedures. The third group of these challenges concern with environmental hazards in which buildings, water sources, climate, personnel, waste materials and power supplies were discussed. The fourth group involve raw materials and their rules to obtain a good quality food with low price for consumer and at the same time should be profitable to the producers.
