The quality of cocoa is determined on one hand by how well and how efficiently the producer adheres to the correct methods of planting management and processing of the crop for commerce; on the other hand the quality depends on the manner of handling of the processed crop and the type of care given it by the operators. The operators in this case include the buyers, exporters, store"=keepers, collateral managers, transporters and forwarders. 



South"=western Nigeria occupies about 30 percent of Nigeria and has an estimated population of about 30 million. Over 50 percent of the area is categorised as rural areas of which about 90 percent of the people depend on farming for their livelihood. Over 90 percent of cocoa is produced in this region. 60 households of cocoa farmers were interviewed using questionnaires to get information about management factors.



Information on factors affecting the market value of cocoa was elicited by interviewing farmers on their farms using standardised questionnaires. Climatic factors as well as characteristics of cocoa plantations were included in the study. Linear multiple regressions was used to estimate relations between land, management, crop yield and climatic factors.



Post"=harvest operations begin with harvesting of cocoa pods and consist of fermentation and drying, grading, storage and transportation of cocoa beans to users or buyers. At the three studied production centres, harvesting was done at an average 2--3 times a year using a harvesting"=hook. The harvest labour input ranges from 5 man"=days per hectare (of light crop) to 10 man"=days per hectare (for heavy harvest).



The cocoa farmers in the study areas were found to generally comply with the known standards for processing cocoa beans. This is also applicable for most cocoa farmers in the old cocoa region, majority of whom can be said to have perfected the skill of fermentation, drying and storage of cocoa beans. If there are therefore any complaints on quantity by end"=users, the logical conclusion can only be that these arise through improper handling by subsequent players in the cocoa chain.
